Baxter Rotating Rack Ovens are ideal for baking, roasting or reheating a variety of food, thanks to our unique airflow system. Heat is controlled so that it is dispersed evenly from top to bottom of the oven. The result is that everything from breads and pastries to meats and casseroles can be cooked thoroughly and evenly.
The hallmark of all Baxter Rotating Rack Ovens is our unique airflow system. A ceiling-mounted axial fan continuously pulls air up the length of the heat exchanger and forces heated air across the unit and down the other side of the oven. When the oven's timer is started, the heavy-duty rack automatically lifts and begins to rotate, further ensuring even distribution of heat across every product in the oven. Cold and hot pockets are eliminated as consistent temperatures are maintained.
This airflow combines with our self-contained patented spherical cast steam system to provide even heat and moisture dispersion, which in turn provides a perfectly even bake. The steam system controls steam and humidity without the nozzles that are prone to the clogging, scaling and other problems associated with bad water. Consistent water volume is provided through a wide pressure range, ensuring a repeatable steam/bake every time.
Digital controls are easily programmable - in fact, you can enter up to 99 menus for consistent cooking each time. Controls allow the operator to select four-stage baking and a cool-down mode, while features such as auto on/off and a 24-hour clock make it simpler for you to load, bake and unload product on your schedule. An auto/set back mode is provided to help conserve energy - after 90 minutes of inactivity, the oven will automatically reset to 250˚F.
A heavy-duty rack lift/rotator is built to handle the heaviest loads, from baking to roasting. To make loading and unloading product easier, the rack carrier automatically stops in the load/unload position when the door is opened, and the rack lift rotates automatically when the door is closed. The load and unload process is further simplified by the considerable convenience of the oven's patented rampless floor. Coupled with a slip-clutch design, the lifting mechanism is trouble-free.

Steam settings can be adjusted to accommodate cooking type. The rotating rack oven is shipped with baking steam as the factory setting; this setting adds a burst of steam at the beginning of the bake cycle, when requested. However, the oven can also be set to a foodservice steam mode at installation. Foodservice steam adds a pulse of steam throughout teh cook cycle to minimize meat shrink; the operator is able to set the amount of steam and the time between bursts.
The oven's heavy-duty rack lift/rotator is built to handle the heaviest loads, from baking to roasting. To make loading and unloading product easier, the rack lift rotates automatically when the door is closed. This gentle stop/start action allows handling of the most sensitive product.

Everyone is constructed from durable stainless steel by a team dedicated to building that particular model. And each one is overflowing with features that last, beginning with built-in rollers and levelers for easy installation.
Our heat exchangers are not only unique in that they're made without welds, but they are strong and reliable. We are so confident in this technology, we warrant the tubes for 10 years without requiring annual preventative maintenance visits. Of course, more important is how well they work, allowing for consistent heat from the top to the bottom of the oven, thanks to turbulators that equalize tube temperature and allow maximum heat transfer.

Every Baxter Rotating Rack Oven is equipped with an emergency electrical breaker shutoff, and gas models include many features that enhance operationsal safety. Gas ovens include in-shot burners with a patented design—no moving parts, no burner blower required. These in-shot burners feature a quick start-up and recovery, and as an added bonus, they operate quietly. Every gas oven goes through multiple safety checks of the hood draft, exchanger draft, flame sensor and flame rollout switch before it leaves our factory floor. And as an extra precaution, an emergency gas shutoff is located behind the control panel for easy access.
With so many concerns about energy efficiency - not to mention budget efficiency - you'll be pleased to know that our rotating rack ovens are built to reduce the amount of energy you use in your cooking and baking.
Each oven has an energy-saving idle mode - if the oven is unused for more than a certain amount of time, the idle mode kicks in, reducing energy usage by 89 percent. The factory setting for idle time is 90 minutes, but the length of time can be reprogrammed at installation. Energy use is managed while cooking, too—it takes a temperature of only 250˚F to maintain the steam system above the flash point. And when baking is required, it's just 10 minutes until the oven is at optimal baking conditions.
Our steam system also acts as a heat reservoir to prevent heat loss when doors are opened and to ensure faster heat recovery. The wide viewing windows that allow you and your customers a look at what's baking are constructed from Low E glass. This type of glass improves heat retention and results in lower energy costs.
